Also known as the Pasilla chile when dried, the Chilaca is popular in regions surrounding Mexico City where it is called the cuernillos, or "big horns" because of it's elongated and twisted shape. It's glossy emerald green color darkens to a rich dark brown when mature and has a deep, smoky, mildly hot flavor with anise, raisin and berry overtones. Excellent for sauces and vegetable dishes the Chilaca is frequently charred and shredded into tamales, stuffing's and soups
