Also know as the Caribe Chile, the Fresno Chile was developed in 1952 and named after the California city. The red Fresno chile's are often confused with their cousin the Jalapeno, but are wider at the top and have a more earthy, pungent ,hotter, and sweeter flavor. They are used in a wide variety of dishes ranging from latin soups and stews as well as spicy Sichuan and Asian dishes. This medium sized waxy chili has thin walls so is excellent to roast and puree into sauces and stews. They are delicious chopped added to salsas, dips and marinades or bbq on the grill whole with meats and poultry. Their strong flavor lends itself well to pickling and canning, so stock up and pack some away for the summer.
