Summary: Constant Heat is not it's friend ! 2007-11-04
Comment: In my profesional opinion as a chef when using this griddle for 8 hours straight even at a medium temp. there was quite a bit of heat distortion .Possibly if you using it for a couple hours it might be ok .I was suprised because the griddle is very sturdy & heavy.
