Wild-caught salmon tastes out of this world grilled on an aromatic wood plank. This set of four cedar planks makes an excellent gift for the outdoor chef who has any kind of gas or charcoal barbecue grill. Before use, the planks are soaked in water (to which spices may be added) for at least 20 minutes, then placed directly on a hot grill. After the planks begin to smoke and char a bit, the fish or other seafood, poultry, or meat is laid on top. If a plank begins to actually burn, a spray bottle of water can douse the flames and cooking can continue. The planks are reusable as long as they are not too charred or cracked, in which case they can be crumbled into the grill for adding a smoky flavor. To extend the life of the planks, they can be heated and used just for serving. Each plank is made in Canada of untreated, slightly rough Western Red Cedar and measures 15 by 7 by 3/8 inch, long enough to hold shish kabobs and large fillets of fish. To reuse, scrub gently with warm soapy water and rinse clean. The planks are gift-wrapped with attractive color photographs, and recipes are included. --Ann Bieri
