Robert F. Hart began making this fine Canadian cheddar in 1933. Today, Black Diamond is probably Canadas most well known cheddar. Made from raw milk, this white cheddar encased in black wax is aged a minimum 2 years with a sharp, robust, tangy flavor.

Comment: This is the best I have ever had, It is a bit expensive when you buy it online as you have to pay shipping. Check in your area to see what stores carry it. But ... if you want to send this as a gift to any cheese lover you know, This is the one.

Comment: I have tried numerous cheddar cheeses but this is the best tasted in over 30 yrs! You will not go wrong with this. Too bad can not get the 10lb version anymore from amazon it would last a long time.

Comment: Bring this to room temperature so it breathes and sweats and you need do no more than cube it and serve. The taste and texture are archetypal cheddar. Dangerous to have around if you are a cheese-lover...

Summary: Excellent Cheese Indeed - but Check this out 2003-12-18
Comment: This cheese is slightly crumbly, tangy, I believe it *would* go well with chutney, but it's more versatile than that. Still, if this type of cheese hits your hot button, you should consider trying the "special reserve" Black Diamond. This venerable comestible has been aged for a minimum of 4 years!! All the things you like about the standard Black Diamond are even more in evidence in the reserve. Perhaps best of all, you can buy a pound of it at CostCo for only 8.99!! Whew.
