In a tiny, one-room dairy in the dense, green hills outside Executive Chef Gianluca Guglielmi's hometown of Vicenza, Enrico Grandis, his wife, daughter and son create the finest organic goat's milk cheeses we've tasted. Working with only two kettles in their small dairy, production is extremely limited. Grandis believes the quality of his cheeses begins with naturally fed goats.He maintains a heard of 200 goats, all of them born and raised on a diet of grass and flowers on his property. We import five cheeses directly from Enrico and are the only retailer on the west coast to sell them.Enrico's Grandis' most seductive and savory cheese is this delicate caprino, made with fresh organic chives handpicked on his property. The harmonious pairing of young goat's milk cheese and chive bursts sweetly on the palate and, thankfully, lingers long after.
