A selection of Paula Lamberts handmade artisanal cheeses from her renowned Mozzarella Company in Dallas. A perfect selection for a flavorful cheese tray. One half pound of each of the following: Blanca Bianca (a soft-textured, mellow raw-milk cheese bathed with white wine as it ages for over 60 days), Montasio Festivo (a firm-textured, assertive, aged goat cheese with has a deep red rind made of a puree of robust ancho chiles) and Deep Ellum Blue (an earthy, soft-textured cow's milk cheese with a moldy blue exterior.) Cheeses to serve with both white and red wines. Enough cheese to serve 8 to 12 generously.
