Summary: Perfection! 2008-06-15
Comment: While it's true this product contains a lot of coconut (and I'm not a huge fan of coconut) I think these muffins are as good, if not better, than regular carrot cake. Even my family loves them and they aren't on low carb diets. These are a staple in my kitchen!

Comment: Awful! Full of coconut, the dry mix reeks. They should rename it "Coconut Carrot Muffin". This is not a classic recipe.
