Soft unpasteurized cows milk fromage from the Cote-dOr and Burgundy regions of France. Flavored with sage, covered with an orange rind, it is creamy inside and intensely-flavored. Flavored with spices, this was a favorite of famed food connoisseur Brillat Savarin.
