Tuxford & Tebbutt Creamery, dating back to 1780, is located in the small market town of Melton Mowbray in Leicestershire, England. The Tuxford & Tebbutt Creamery stands externally unchanged in appearance since its construction in the 18th century. While T&T might be steeped in history (they still produce the classics), they certainly have not rested on their laurels. There is nothing stodgy about some of their lively new takes on cheeses. Looking across the pond for inspiration, T&T created Monterey Jack & Chili Cheese. David Jacks, a Scottish immigrant who settled in Monterey, California created Monterey Jack in the 1890s. Jacks followed a Swiss-method of cheesemaking, which is why Monterey Jack has its semi-soft, cracked texture. T&T uses a young Jack for their creation and adds layers of flavor of smoky barbecue and crushed chilis. This is a Tex-Mex delight by way of England! Adds flavor to so many dishes, shredded or sliced, melt over nachos, omelets, pizza, tacos, casseroles, burgers, and of course chili! Made from pasteurized cow's milk. Suitable for vegetarians. We cut and wrap this item from the wheel in 1/2 pound wedges.
