Summary: A little dab will undo 'ya. 2006-11-10
Comment: This little cheese is absolutely devine! Rich, sweet and fulfilling, notwithstanding its diminutive size. If you are trying this French gem for the first time, take this advice with confidence; buy more than one. You'll need at least two, if not half a dozen. It should be brought to room temperature, but only for about 20-30 minutes as it tends to run and you may end up with a delicious paste that is hard to handle. I prefer it with fresh Bremner wafers (plain), or by itself. Fruit is also a wonderful accompaniment, especially soft, sweet pear. In any event, steer clear of any cracker that is overpowering as this cheese is subtle. You are in for a treat!

Summary: This Stuff Should Be Illegal 2004-12-17
Comment: Pave d'Affinois should be placed, like Demerol and prescription marijuana on the ClassII list of drugs: it is rich, sinful and so dangerous that within minutes you've eaten this entire "paving-stone" shaped soft cheese mass and consumed untold grams of fat and calories.
If you have more than 2 people over for drinks and appetizers, one of these will not do or you might have a fist fight between your guests clamoring for a bite or a hunk of this stuff.
Pave d'Affinois is the rich cousin to Brie and the butterfat content would choke a horse but it is a wonderful thing to behold and to eat.
For the Holidays, nothing says love like a small 4 oz paving stone of Pave d'Affinois for each of your guests. Add some toasted baquette squares and a deep, dark, sumptuous Cabernet and you are as close to Nirvana as anyone could ever be w/o dying.
