The Radicchio Rosso di Treviso fed the people of Veneto for centuries, but for the last few years, it has also become one of most prized and sought out of vegetables, requested by the most prestigious tables in the world. A relative of chicory, raddichio has a delicate, slightly bitter, yet refreshingly nutty flavor. There are two varieties from Treviso, Precoce and Tardivo. They both enjoy IGP (Indicazione Geografica Protetta) status by the European Union. The precoce comes into season first, but the later growing tardivo is more flavorful. Radicchio Cuore Trevigiano has chosen to feature the fascinating flavor of the tardivo in their refined specialty products. Thanks to Radicchio Cuore Trevigiano, this special winter vegetable is now available all year round. This is a rare Italian treat.The Late Red Radicchio of Treviso is sliced and jarred in Garda Extra Virgin Olive Oil with the right mixture of herbs and spices to enhance its elegant gastronomic qualities.
