Nothing goes to waste in the Tuscan kitchen and that includes stale bread. This blend of beans, potatoes, carrots, leeks, peas, onions, cabbage, green beans, zucchini, celery and spinach is simmered and then poured over thick slices of leftover crusty bread in a bowl.
