Amber Jack tuna are a popular sport fish, and typically only grow to between 40 and 60 pounds. Their size, smaller than typical tuna, makes them a milder tasting fish with pale flesh. This Amber Jack tuna is packed immediately in olive oil to preserve it and keep it from getting dry.
