Carnaroli rice is an even higher grade of superfino than arborio rice, but is used much less often because it has such a low yield per plant. Use it only for special occasions, simple dishes where you want the rice to be center stage. It will cook creamier than arborio because it has an even higher starch content, but it may also take longer to cook and more liquid, so plan your recipe accordingly.
Comes in a 14.1 oz. (400 gr) bag.
