Also known as Emmer wheat (triticum dicoccon), Farro is an ancient Italian grain with a firm, chewy texture that's similar to spelt. With a nutty flavor and texture and a low gluten content, Farro has been gaining popularity amongst gastronomes in Italy and America. Great as a side dish, salad condiment or an alternative to potatoes or rice. Simply boil farro in salted water for a couple minutes, drain and add fresh tomatoes, extra virgin olive oil and fresh herbs. Garnish with grated Grana cheese.
