Summary: A rare product these days 2008-07-15
Comment: In too many restaurants these days, the white clam sauce that is served with pasta dishes tends to be a thickened and rather heavy tasting affair. Since the Progresso Foods company ceased producing the variety of this sauce that came in 12 oz. jars, nearly all of the the store-bought versions sold are similar to the thick- textured restaurant sauce. The Victoria product, infused with a hint of white wine, is a light, delicate creation that, although resembling the Progresso sauce, has its own distinctive character. It is very slightly thicker than Progresso's recipe but it definitely leans toward the broth-like consistency of that variety. As one who became very accustomed to this lighter traditional style of clam sauce, I feel that I owe a debt of gratitude to the Victoria people for keeping this tradition alive. I thoroughly recommend the product.
