This heavy-duty pressure cooker's large capacity is probably best utilized for canning (though it would also be great for a number of cooking tasks). A pressure cooker is generally recommended when canning vegetables and nonacid fruit, since the high heat that can be generated will kill more bacteria than a regular hot water bath. Made from cast aluminum, with sturdy screws to seal the lid to the pot, this pressure cooker requires no rubber or plastic gaskets or rings. Its 21-1/2-quart capacity holds 19 pint jars or 7 quart jars. A three-setting pressure regulator valve is included, and the pressure gauge gives a clear reading. Summary: American Manufactured Quality ! 2010-03-14
Comment: Recently purchased the American Pressure Cooker/Canner, and have picked up all of my canning supplies, jars and lids. Just waiting now on Spring/Summer and the fresh vegetables I want to put up. Also interested in canning chilis and stews, so pressure canning was needed.

This quality cookware is solid built and I like the fact that there are no rubber seals to wear out. That being said, there are a couple of simple rules to follow in order to make certain the lid removal is easy, after processing. These are simple to follow and should have no issue if using common sense. This unit will outlast me and something to pass on to future generations.

I would recommend this 21-1/2 quart size. Also comes with a good book detailing operation, canning technique, and recipes.

Comment: This pressure canner is amazing. It is VERY large, VERY sturdy, VERY heavy, and it seems to be a quality unit. I've canned in it several times with great results. Having both the dial gauge and the weighted gauge is terrific (especially because I'm at a high elevation). If you have a lot to can at once, this is your canner (I'd consider one size smaller if you can less at one time). If you've never used a pressure canner before, the first time can be a little scary! Just make sure you follow the directions. It is fabulous and I highly recommend it if you love to can - it's worth the money and I'm pretty sure it will last forever. As always, it was easy and fast to order this from Amazon and I received it quickly. As a side note, I ordered the Ball canning cookbook at the same time and it is awesome.

Summary: Just read the instructions 2009-11-19
Comment: This is a great size for canning. My husband does the fish canning and he loves it because he could can 16 pints at one time and when you are doing 100 lbs of fish at a time it went fast.
Just be sure and put vaseline around the lid each time you use it we only did it the first time and it would stick each time if you did not put the lubricant on. Overall the price is a little high but it is a great way to can fast.

Summary: I was very lucky when I got this canner . . . 2009-11-16
Comment: I have has this canner for about 20 years and it was far from new when I got it. I had always wanted a pressure canner, and doing research on them back then (before the internet) was not easy. I saw "pressure canner and jars for sale" in a local "Penny Saver" type of paper. I used it for several years before a friend of mine moved to a retirement community and gave me her pressure canner. That is when I learned that this ALL-AMERICAN is THE one to get. Hers has a gasket and I now know that oiling the gasket before I process a load of food helps, but there are actually times I have had to ask my husband to open it. I only use that non-ALL-American one when I have so much food to process that I need 2 canners. The ALL-AMERICAN is so safe, and so simple. Plus they continue to be thicker than many other pressure canners (compare the weight against the 23 qt. Presto for instance). If you are serious about canning then get this serious canner. And, you don't need to buy an enameled water bath canner if you have this because you can use it without pressure too--using steam, which is easier and safer than having to deal with a large pot of boiling on top of a stove. (Instructions are included for doing that).
