Shun's 4-inch Paring Knife offers such control and precision, it will improve meal presentation and reduce waste. The sharp blade makes it effortless to peel even slippery foods like kiwi while leaving the fruit intact. The wavy, ???Damascus??? pattern provides easy release for uninterrupted use. Made in the ancient city of Seki, Japan, Shun knives rely on extremely sharp blades, made of Japanese VG10 steel clad with 32 layers (16 on each side) of high-carbon stainless, it delivers precision slicing, cutting and chopping unprecedented by its competitors. Imagine, a knife made the same way as ancient Samurai swords, handcrafted still today. Sharper out of the box than other knives, the Shun Classic maintains its sharpness longer, since the finely-polished blade edge has a natural tendency to remain straighter, yet can be honed using a standard steel or sent to the factory for free sharpening. The wavy, Damascus-look pattern on the blade offers stick resistance, reducing prep--plus it's rust-free. The Alton Angle, a design contribution of cookbook author and celebrity chef Alton Brown, provides more finger and knuckle clearance than a standard, straight knife allows while cutting and slicing. Summary: my favorite knife 2008-05-08
Comment: Concern about the price kept me from purchasing this knife for some time, but I finally broke down, bought one and have zero regrets. It makes any kind of food prep a pleasure. The precision, balance and control are without peer. Worth every penny.

Comment: Purchased several of these as "perfect gifts". Discovered that now I can't do without the little critter my own self. The angle just works, it's double bevel makes it more adaptable than the various >64 HRC Japanese boron steel knives. And any concerns of brittleness or sharpening difficulty mitigated by design & quality. And, of course, the balance and beauty alone make it worth the cost.
