A far cry from the rudiments of early bread makers, the Breadman Ultimate Bread Machine offers an incredible range of features and over 200 settings. Suitable for the novice or the advanced baker, it includes standard functions, as well as settings for pizza dough, bread dough, batter breads, whole wheat, cakes, and jam. You can choose to delay baking for 24 hours, rapid bake in 59 minutes, or customize baking times according to personal preference. There's even a 60-minute power backup feature and a bake-only selection for when you choose to mix by hand. With its brushed stainless-steel base, the Ultimate Bread Machine is an attractive if rather large unit. The size is due to the machine's horizontal bread pan, which can be used to make 1-, 1-1/2-, or 2-pound loaves. The hinged (but fully removable) lid features a clearly marked digital display and soft-touch control panel. Programming options cover crust consistency, baking time, bread type, oven temperature, and pause functionality. The lid also includes a steam vent, a viewing window, and a patented herb/nut/fruit dispenser. Closed, the Ultimate measures 15-1/2 by 8-1/2 by 12-3/4 inches. Breadman includes an instruction manual, a how-to video, and a recipe booklet. The machine carries a one-year warranty. --Emily Bedard

Summary: Excellent Bread Maker 2006-04-10
Comment: I'm very impressed with this machine. It allows you to be very creative with your baking. You can pause the machine during the last rise to make a decorative crust, braid it, roll it (mediterranean-style), add crumbled toppings etc. etc. It can also make pizza dough, focaccia dough, bagel dough, soft pretzel dough, batter breads, cakes, and jams. You have the choice of using the machine to mix and knead only (bake in your own oven). It also has a 'bake only' option if you come to the end of a cycle and realize it still needs to bake a little longer. It does not heat up the whole house the way the oven does! It allows you to program in a few of your own customized recipes. It also has a fruit/nut dispenser which adds in these extras at the appropriate time. The pan is a regular horizontal shape, so the bread comes out looking like a traditional loaf. One caution: Bread machines are not quite as "dump everything in and forget about it" as say a crock pot. You may have to scrape the corners of the pan with a spatula on the first kneading cycle to make sure that all of the flour is incorporated. And it's a good idea to take the loaf out of the pan in order to remove the kneading paddle at the beginning of the last rise. Some people say their bread machine jumps around quite a bit during kneading...which seems like reason enough not to leave it completely unattended.

Summary: Not bad 2004-06-08
Comment: If it didn't leave a big hole in the bottom of the loaf it would be wonderful. So I usually just make the dough (thats the part I hate to do anyway) and put the bread in a loaf pan and cook it in the oven. The whole family loves the bread it makes, I can't make enough to satisfy them it seems. If I had time I'd make it daily. I liked it enough to buy the same bread maker for my mother as a birthday gift. Very easy to clean and no leaks so far.

Summary: Many lovely loaves of tasty bread 2004-05-23
Comment: I love my Breadman Ultimate! I got mine about three months ago, and have made at least two loaves a week since. The instructions are easy to follow, the resulting loaves of bread are beautiful and delicious, and clean-up is a real snap. Although the manual and other sources have mentioned that the paddle can get stuck in the loaf, that has happened only once to me, and that was one of the three times that I set up the machine to delay bake overnight. (My mother's older Breadman, on the other hand, always bakes the paddle into the bread--I took a look at hers, and they've changed the shape & the fit of the paddle somewhat since.) I've made tasty white, whole wheat, yoghurt, oatmeal, flaxseed, multigrain, cinnamon-raisin, and soy milk breads. I haven't tried doing coffee cake or quick breads in it, yet, nor have I tried making jam in it. I was sceptical of the "French bread" setting, but aside from the shape, the machine produced a tasty, crusty and quite adequate French bread (I used the Breadman French bread recipe that does not call for oil). In addition to the delay timer, I have tried out the programmable settings, and while they are easy to use, the preprogrammed cycles are perfectly sufficient for just about everything I'd do with the machine. One of the other reviewers stated that his breadpan & its replacements leak after just months of use, and I wonder if that is because he soaks it (a no-no) or puts it in the dishwasher (another no-no), since I haven't experienced that problem. My mother's machine, the predecessor of the Ultimate, hasn't had a leak in 4 yrs of 2 or 3x weekly use, and mine hasn't a sign of a leak, either. I haven't bought a loaf of bread since getting the Ultimate, and in addition to the freshness, taste, and nutrition of homemade bread (and knowing the ingredients!), I'm sure it's saving me money. I used to make bread by hand several years ago--for about 3 or 4 years--but I've become too busy to do it on a regular basis any more; I love my Breadman Ultimate! (The "silver" stainless steel looks good on my counter, too, and I prefer the look-and-feel of the metal to the plastic.) I'd definitely recommend the Breadman Ultimate--in silver or not--to anyone looking for a good, reliable bread machine.

Summary: TR2200WWC Ultimate Breadman is the Ultimate!!! 2004-05-09
Comment: I recently purchased the Breadman TR2200WWC Ultimate Bread Machine after having owned a more basic Breadman for years. We loved our first Breadman, but we wore it out! I decided to try the Ultimate because it offers more features (crust type, bread type, loaf size, extra ingredients, etc.) I bought a box of San Francisco sourdough bread mix and tried baking it in my new Ultimate Breadman. It was AWESOME! The bread looks and tastes like it came out of a good sourdough bakery! I then tried a whole wheat recipe that comes with the machine. Again, AWESOME results! The machine is extremely easy to use. Just make your selection of type of bread (french, whole wheat, white, dough, pizza), type of crust (light, medium, dark) and size of loaf (1, 1-1/2 or 2 pounds), and that's it - the machine does the rest. Average cooking time is 3.5 hours. You won't be disappointed with this machine! Only possible negative is it is pretty big on the kitchen counter.

Summary: WARNING- Does not include the 59 minute rapid bake! 2004-05-05
Comment: It's not amazon.com's fault, it is advertised on the box. But it doesn't have the 59 minute rapid bake feature! The rapid bakes available will take at least two hours.
