Epicurean cutting surfaces not only add a sleek look to contemporary kitchens but perform with commercial-grade sturdiness. This 18-by-13-inch board in a natural brown finish is from the Gourmet series, one of three lines produced by Epicurean. The middle line in terms of thickness, Gourmet cutting boards measure 3/8-inch thick. This particular model is formed with a slate-colored (black) core that shows through at the juice groove cut around the perimeter. While the ends of the board are perfectly straight, the longer edges curve slightly. A hole in the corner allows hanging. Epicurean makes its products in the USA of Richlite, a natural compressed wood-fiber laminate made from sustainable harvested trees. Many countertops now in contemporary kitchens are made from Richlite. The multi-functional surface won't dull knives; is heat-resistant to 350 degrees F, which means hot pans can be place on it without leaving a brown ring; requires no oiling; and is dishwasher-safe and approved by the National Safety Foundation (NSF). Both the top and bottom surfaces may be used for cutting meat, chopping onions, slicing bread, and more-the natural finish will darken with use. The Epicurean cutting surface makes a great gift for the home chef. --Ann Bieri

Summary: My favorite cutting board to use at home. 2008-05-21
Comment: This is a great cutting board. It's durable and can go in the dishwasher. I wish I had purchased the larger one but this one is great for cutting veggies and fruit. Would definately recommend.

Summary: So Far, So Good 2008-05-05
Comment: I purchased this a month or so ago after researching for quite some time. I was originally considering a John Boos, but for the sake of size and storage, I choose this. I've been very happy so far, light weight, easy to clean, and has held up very well for using every day. I highly recommend.

Summary: Nice size and weight; but very hard feel... 2007-11-26
Comment: The board is very light for its size and appears to be quite durable. And it's easy to clean.
But it has a very hard feel--more like cutting on glass or granite than on a traditional wood or plastic board. If you do any chopping, it sounds like machine gun fire. And if you do slicing/rocking with a curved chef's knife, it's still has a pretty harsh feel. I still haven't used it long enough to judge whether it really doesn't dull knives any faster than wood--but I have doubts, given how it feels.
Also, out of the box it had a horrible smell--like a wet dog wearing a wet wool sweater. But after a run through the dishwasher, it went away. Not sure if it will ever reappear (tho I note that Cook's Illustrated described the device as having a bad, lasting odor).

Summary: Nearly Flawless 2007-08-04
Comment: This is an excellent cutting board. It's nice to have a large board with a juice groove that is dishwasher safe. I prefer wood for cutting non-bacterial stuff like produce, but this is perfect for things like poultry. I also used it to carve a rotisserre chicken, and was quite pleased. The one minor flaw is that I have a granite countertop, and unless I place a towel underneath it slides a little if I'm doing some serious chopping. But as it's meant to be usable on two sides, I don't mind very much.
