This could quickly become one of your favorite pans. The pan's large 12-inch size, deep sides, and nonstick surface make it practical and versatile. Heavy-duty construction, including a stainless-steel stay-cool handle securely riveted to the pan, make this one strong piece of cookware--would you expect anything less from something with George Foreman's name on it? Ribs that radiate from the center of the pan hold food above any accumulated fat. The base of the pan is sloped--higher at the center and lower at the edges--to drain grease and fat away from food. The special materials used in this pan make it a bit finicky. The manufacturer suggests cooking over medium heat at the highest; the grill pan conducts heat well but will require a few minutes of preheating, especially for searing meats. The pan is intended only for gas and electric ranges; it could damage ceramic hob or flat-top cooking surfaces. You can slip the pan without the lid into the oven up to 390 degrees F; the lid can only withstand 325 degrees F. This pan is not recommended for the dishwasher, so count on washing it by hand with hot, soapy water. --Cynthia Nims
