The square shape of this heavy-duty aluminum grill pan provides extra surface area for cooking, making it a great choice for folks who often feed a crowd. The bottom of the pan has a sloped surface to draw excess fat and other liquids down to one side; a pouring lip makes draining easy. The nonstick surface not only lets you minimize added fat for cooking but also helps make cleanup a breeze. Parallel ribs keep food above the fat and make attractive grill marks on meats. The pan should be used over medium heat, at the highest--so you'll need to preheat it for a couple of minutes to get good sear marks on the food. The pan is intended only for gas and electric ranges; it could damage ceramic hob or flat-top cooking surfaces. You can slip the pan without the lid into the oven up to 390 degrees F; the lid can only withstand 325 degrees F. This pan is not recommended for the dishwasher, so count on washing it by hand with hot, soapy water. --Cynthia Nims
