Twin Signature knives feature high-carbon stainless-steel blades that have been stamped from a single piece of metal and put through the patented Friodur ice-hardening process to ensure their strength. The edges are laser-controlled for consistency and sharpness, and each one is hand-honed during the production process. Comment: The veggie cleaver was a gift for my father. He loved it! He saw how fast he could cut veggies for our meal. He was so happy. Its light and easy to use. Plus a great addition to his knife collection. He was very impressed with the knife.

Summary: good manufacture but poor blade design 2007-06-25
Comment: This cleaver is of good quality, but the design of the blade is poor. Since the blade is curved, unlike the blade of a Chinese cleaver, it is not possible simply to chop without drawing the blade back and forth, even several times. Minching is out of the question.

Comment: Very sharp! Not much effort needed to chop boney parts of meat! I was unsure about what I was getting when I bought it but now I can assure you if you're looking for a cleaver that does the job and fits your budget, you MUST get this! Very very happy with my purchase.
