Summary: Great pan at a great price 2005-02-02
Comment: Because of the thick aluminum bottom, this pan heats up quickly and evenly. It is extremly responsive to changes in the burner setting.
Because there is no aluminum wasted on the vertical sides of the pan (where it isn't needed in a saute pan), the cost is much more reasonable than better-known brands such as All-clad. In fact, this pan performs as well or better for sauteing than our All-clad 6-quart LTD saute pan, which cost 3 times as much.
Clean-up is easy. For sauted vegetables, just soap and water are fine. Even for messier cooking (meat or chicken), a little Bar Keeper's Friend makes clean-up fairly easy. The mfg. says its dishwasher safe, which is true, but we don't put it in the dishwasher because it spots and discolors the steel. However, this is purely cosmetic, so if you don't care about how the pan looks, you could use the dishwasher.
The only reason for 4 stars instead of 5 is the lack of any detailed specifications on the pan, from either Amazon or the manufacturer. The pan appears to be identical, except for the lid (slightly different shape), to the Sitram Profiserie line, which has a 7mm (1/4") aluminum disk on the bottom. (This is the key spec. that determines how well the pot transfers and holds heat.) However, Amazon calls the pan "Professional," and could not tell me if it's identical to the Profiserie line (after emails and phone calls). I checked the Sitram (manufacturer's) website, and there was no answer there either. Sitram did not respond to an email.
What I can tell you is that this pan performs superbly, and the price is better than I could find anywhere else on Sitram Profiserie (by that name). I would recommend it without hesitation.
